100 days & Chocolate Melting Cake


100 Days…


...moving into the double digits. It's crazy to think how far away it used to seem. Now only a few months left until we get married. I always thought the time would go by slow, but throw in a year of school and you hardly have a chance to think about how far away it seems. Knowing that we are down to 100 days also means I am remembering all the things I need to accomplish before the day. I used to be able to say that I can do that later, but now it is later.


Once school is done, and summer truly is here, I will be more productive. Right?! It is just hard to sit down and look at flower arrangements when I know I have papers to write and lessons to plan. I want to enjoy all the fun details that are left, and as I write the last few papers I have left this weekend I hope to open up the new wedding magazine I purchased a few days ago. ( I must admit I felt a little guilty when I bought it...I don’t really need any more ideas to deal with, but it was calling my name at the grocery store) So I threw it into my basket, along with all the ingredients to chocolate melting cake (another guilt ridden thing….but so good).


The first time we had chocolate melting cake was on our cruise two years ago. It is deceiving because when you first look at the little Ramekin full of chocolate cake you say to yourself, "that doesn't look like it could fill you up"...but after you are about two bites in the richness of it all hits you, and you realize that this is no normal chocolate cake. Include a little scoop of vanilla ice cream and it's about perfect. So we watched GLEE and ate some melting cake….and it was a good night.


 
Recipe for Chocolate Melting Cake (makes 6 Ramekins)
Prepare yourself….I never said this was healthy.
1 bag of semi-sweet chocolate chips
1 cup butter
6 eggs
1/2 cup sugar
1/2 cup flour (scant)
Melt the butter and chocolate chips together. In mixing bowl mix sugar and eggs, beat in the chocolate mixture, and then lastly add the flour. Pour into oiled Ramekins and bake for 12 minutes at 390 degrees.
Let sit for a few minutes before you serve them...they will be pretty hot. You can dust some powdered sugar on top as well. ( I forgot to do this before the photo) They are best served with vanilla ice cream on the side.

Catching up.


Zach kindly posing for my picture a day only to have Ben throw a cup of water in his face. Ben rationalized it with saying "I have always wanted to do that."


Oh how I wish I had time to paint, sew, etc. For now I must settle for taking pictures of the art supplies of 2nd graders.

slowing down.

This is a photo from Bekah's Birthday party. We all went out for dinner and drinks, and Bekah ended up with a tattoo of all things.

I have been putting off writing here until I have a minute to breate, but then I realized that if I wait for that it may never happen. So here I am at 11pm writing when I should be in bed...so in some strange (and pathetic) act of defiance I am choosing to stay up and write rather than getting stuck in boring adulthood. Who goes to bed at 10:30? Not I. Who wishes she did whenever she has to wake up at 6:00am?...yea that's me. Every night I wish to be young and stay up late, but than morning comes around and I consider forgetting every responsibility for an hour more of sleep. After a battle with my snooze I get out of bed and crawl for the coffee, and usually after 5 minutes of conciousness I am alert and ready to go. I just love sleep so incredibly much, but the problem is I love spending quality time with Ben and my friends more. Sleep deprived, perhaps... but I will gladly sip coffee all morning and yawn on occasion than miss a night with the people I love. After that rant, I leave with promises to post more photos and words. ( I was going to write "words of wisdom" and then laughted at the thought).

Where has time gone?

Sorry it has been so long since I've written last. The last few weeks have been busy with school and life in general. A few of us went on a bike ride today once I got back into town. We went down by the river and then stopped in at the new Dairy Queen in town. After a burger and orange julius we rode home quickly because it suddenly wasn't as warm after eating ice cream outside. It was good to get some fresh air though.

Spent a nice weekend with the family at home. Ben had to stay up and work but I think he managed to have a nice relaxing weekend as well. I will post some photos of my weekend as soon as time allows. But for now words will have to do. Sadly, I can't really even manage more words at the moment. Sleep is calling for me. I fall asleep tonight especially thankful for the gift given to us through Christ. It is wonderful to be loved like we are.
